Dr. Dima Faour-Klingbeil is a dedicated academic researcher, specializing in the microbiological safety of fresh produce, food pathogens transmission, risk assessment and food safety systems, and behavioural science in food safety. Recently her research interests focus on climate change impacts and water reuse in the food industry. She is also a lecturer in Food Safety Laws and Regulations for the Master of Science program in Food Process and Product Engineering (MSc FPPE), a collaborative program between the German Institute for Food Technology and the University of Veterinary Medicine in Hannover.

Dr Dima holds a PhD from the University of Plymouth (School of Biological Sciences), a Master’s degree in Nutrition and a BSc in Nutrition and Dietetics from the American University of Beirut.

I started in the industry at an airline catering unit with a pivotal moment where I observed inspectors meticulously examining a facility, ensuring food was prepared under sanitary conditions. This inspection deeply resonated with my commitment to thoroughness and the belief that everyone has the right to safe, nutritious food.

Inspired by the complexity of food operations, I realized that delivering safe food requires robust systems and, above all, strong ethics and unwavering values – values I uphold in every aspect of life. This led me to focus my career on food safety and hygiene. I took on commercial and quality management roles across diverse international and renowned food businesses, such as in the restaurant industry, food manufacturing, and eventually, contract food service.
After a rewarding 15-year career spanning managerial and executive roles across multiple sectors of the food industry—ranging from airline catering, food processing, and restaurant chains to catering and facilities support services—I concluded my tenure with the internationally renowned Sodexo, where I held the positions of Commercial Manager and QHSE Manager. Following this fulfilling journey, I relocated to Germany to begin a new chapter in life with my husband. After 6 years maternal break and as a mother of two, I embarked on a transformative path, balancing my dedication to my family with my pursuit of a PhD at the University of Plymouth, UK. I thrived in the lab, surrounded by research and science, and worked hard to learn everything from the ground up.
During my PhD research, I explored farm-to-fork challenges, studied the on the microbiological safety of fresh produce in Lebanon- from “farm-to-fork chain” and evaluated food safety compliance levels and underlying risk factors. I became driven to support businesses, firmly believing that safe food is not just a professional standard but a fundamental consumer right. After obtaining my PhD, I faced the challenge of starting anew in a foreign country, compounded by a language barrier. Despite these obstacles, I took a bold step and founded DFK Safe Food Environment in Hannover in 2017 starting from humble beginings. Since then, I have expanded my services, forged initiatives with local chambers of commerce and industry, partnered with international organizations on projects, and helped thousands of food professionals transform their food systems.
Paolo is a graduate in Biological Sciences from ‘La Sapienza’ University of Rome, he started his activity in the agri-food field in 2006, joining a consulting company that had been active in the market for over 40 years. He began working in food labeling compliance in 2007, first specializing in the Italian and E.U. market and then turning his attention to the markets of many non-EU countries (U.S.A., Canada, MERCOSUR, Gulf Countries, among others). He deals with label revision and design, training courses and regulatory advice. Since 2019, he has been a freelance consultant, dividing his activity between working with consulting and certification companies in Italy, Switzerland, the U.K. and the U.S.A. and managing his clients on the national territory.
Dr Carol Hull-Jackson is a seasoned expert with over 20 years of experience in consulting, academia, and research. She holds a Doctor of Veterinary Medicine, a Master’s in Microbiology, and a PhD in Veterinary Public Health, along with certifications in ISO 22000:2018, FSSC 22000, and project management. Her work, including published research on food safety and zoonotic diseases, highlights her dedication to improving global public health. Outside of her professional pursuits, Carol enjoys singing, writing, and staying energized on the tennis court.
