Course Overview

The Level 1 Food Safety e-Learning course is suitable for anyone without prior food safety knowledge and serves as an ideal induction course to food hygiene. Topics covered include: handling of low-risk and wrapped food, front-of-house staff (including waiting/check-out employees) and back-of-house staff (kitchen porter/warehouse employees).

Course module topics

Module 1 - The Importance of Food Safety

This module is an Introduction to Food Safety, it teaches you about the risks associated with handling and preparing food.

After you’ve finished this module, you’ll be able to:

understand your responsibility in adhering to food safety rules
state what happens if there are poor food hygiene standards
state the benefits of good food hygiene standards
identify common food hazards
describe common symptoms of food poisoning
identify those most at risk from food poisoning.

Module 2 - Food hygiene

In this module you’ll learn:

about the importance of washing your hands regularly
how to wash your hands properly
what to do if you have a skin condition or infection
how to safely cover spots, cuts and wounds
when you must report illnesses
how to use personal protective clothing and equipment to keep both you and the food you handle safe.

Module 3 – Cleaning

In this module you will learn about:

cleaning processes and how to follow a cleaning schedule
what cloths you should use for what job
what type of bins you should have in your workplace and how to use them to dispose of waste safely
some of the pests that can lurk in your workplace and what you can do to keep them away.

Clean and safe
Detergent and disinfectant
Washing facilities for food and equipment
Cleaning schedules and general cleaning rules
Pests
How to clean dishes and utensils

Module 4 – Contamination

Contamination happens when something harmful or unpleasant ends up in food. In this module, you’ll learn how to handle food safely to prevent contamination and cross-contamination

This module will show you:

how food can become contaminated by physical, chemical and biological contaminants
how to handle food safely and effectively to prevent contamination
the importance of time and temperature controls in cooking and storing food
how to rotate food stocks safely and effectively
the importance of reporting any incidents that may put the safety of food at risk.
